Vegan Chickpea Vindaloo(Chickpeas, potatoes, carrots, green beans, peas, tomato and onions simmered in spices and served over brown rice)

Vegan Pasta Primavera (Penne pasta tossed with cauliflower, carrots, broccoli, yellow Squash, zucchini & lots of roasted garlic)

Vegan Black Bean Burrito (Black beans, rice, tomatoes, corn, bell peppers and onions in a spicy lime sauce wrapped in a flour tortilla)
